Boiling Peanut Brittle

This is my personal recipe.

You have to watch it rise to just the

 right temperature..or it won't harden

 to the right hardness.

Once it has reached that 'just right' temperature, then I pour the brittle onto wax paper and let it cool.

I prefer the non-specific size, I like to let the brittle 'free flow'.

It's cooled, ready to package.. The generously nut filled discs measure anywhere from 4.5" to 5".
